Vegan breading: This is how the breading gets nice and crispy

If you eat vegan, you don’t have to do without a delicious breading. Because even vegetables and co. can be wonderfully breaded with a few tricks – and all without eggs.

For breading, the food is usually first turned in flour, then dipped in beaten and seasoned egg and finally rolled in breadcrumbs. But there are also vegan versions without eggs.

Vegan breading: Here’s how

For vegan breading, you can simply replace the egg with a liquid mixture of soy flour and water.

Ingredients:

1 tbsp flour
3 tablespoons water or unsweetened plant-based milk (e.g. soy milk, oat milk, almond milk)
1 pinch of salt
grated organic lemon zest
breadcrumbs
Food of your choice
Preparation:

Stir the flour with the water or plant-based milk until creamy and refine with a little salt and grated organic lemon zest.

Leave this mixture for a while. The consistency should resemble a cream soup.

Then turn the food first in the liquid and then in the breadcrumbs.

Tip: You can refine the breading with herbs such as thyme or rosemary, grated hazelnuts or walnuts, vegan cheese or chopped olives.

What is suitable for breading?

Almost any vegetable is suitable for breading. Eggplant, zucchini, kohlrabi, pumpkin and turnips are some of the vegetables that you can wrap raw. Harder vegetables such as celery and beetroot should be cooked al dente beforehand. Oyster mushrooms can also be breaded well. However, you should first flatten them a little.

Tofu is also suitable for breading. To keep it from being too watery, take it out of the packaging at least two hours before cooking, squeeze it out and place it on a plate between two sheets of kitchen paper. It is best to weigh down the plate with a heavy object, such as a pot.

Then soak the tofu pieces in soy milk or nut milk and roll them in sesame seeds or coconut flakes. It is important that the breading adheres well and does not come off when frying in hot fat. However, breading with nuts or seeds should not be fried too hot so that they do not burn.
