Recipe for Mücver from Turkey

ingredients

800 grams of courgettes
3 spring onions
1 bunch of dill
1/2 bunch of parsley
2 eggs
6 tablespoons flour
130 ML sunflower oil
salt and pepper

preparation

Wash the courgettes, cut off the stalks and grate the courgettes using a vegetable grater. Salt the grated courgettes and let them soak in water for about ten minutes.

Cut the spring onions into fine rings, finely chop the parsley and dill.

Squeeze the courgettes well and place them in a large bowl with the herbs. Add the eggs, flour, pepper and salt and mix well.

Pour sunflower oil into a pan until the bottom is covered. Add a heaping tablespoon of vegetable dough to the pan and shape into flat fritters. Then fry until golden on both sides.

Place on paper towels to drain and serve warm. Tastes especially good with herb dip.
